It begins with a hand. Pressing rice. Glazing a plate. Fitting a joint of wood without a visible screw.

Okonori was not designed and then built. It was built, and the design revealed itself in the making.

Nothing here arrives finished. Rice cut with vinegar and held at body temperature. Joinery that holds without screws. What we serve is made at the moment it is served.

見立て re-seeing

We take a form from a tradition and build it again rather than copy it. A temple dish becomes a drink. A painter's empty margin becomes a plate. The reference is structural. The result is ours.

余白 the empty space

One thing in a field. What surrounds a piece is not what was left over. It is part of the composition.

温もり warmth

Hospitality as a gesture, not a performance.

Authenticity, for us, is alignment. The rest of this world is the evidence.
